Crazy Fish and Seafood Broth

  • 80 grams octopus
  • 120 grams tilapia fish
  • 100 grams crab
  • 120 grams shrimp, clear
  • 370 grams tomato
  • 1 clove garlic
  • 60 grams dried shrimp
  • 30 grams red onion
  • 20 milliliters vegetable oil
  • 40 grams onion, white
  • 1 teaspoon aromatic herbs
  • 1 ounce brandy
  • 1 leek, chopped
  • 80 grams guajillo chile
  • 1 1/2 liters fish broth
  • 4 tablespoons fresh cilantro
  • pinches coarse salt
  • 4 tablespoons green bell pepper
  • 5 milliliters olive oil

  • This is a recipe from the state of Nayarit. To prepare it, first fry chopped white onion, one chopped garlic clove, and deshelled guajillo chili sliced into thin rings in oil until golden.
  • Add the shrimp shells (skin), fry them to give flavor. Add bell pepper, herbs, thyme, and bay leaf. Let the shells turn orange.
  • Flame with one ounce of brandy, being very careful not to burn yourself. Then, add diced tomatoes and fish stock, which is a fish broth made with bones. If you don't have stock, use traditional fish broth.
  • Let it cook for a couple of minutes and then blend everything in a blender. Strain and cook with the seafood, finally add the fish which takes the least time to cook. Let it boil until the seafood is ready.
  • Garnish with red onion and avocado, add a few drops of olive oil.
