Creamy Fish Croquettes with Chipotle

For Lent or to prepare fish in a different way, you can cook this recipe for Creamy Fish Croquettes with Chipotle. For this easy and yielding recipe, you should mix everything when your preparation is completely cold, as this will help you achieve better breading.

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic
  • 500 grams fish, chopped
  • 3 tablespoons chipotle chile, ground
  • 2 tablespoons fresh cilantro, finely chopped
  • salt and pepper
  • 2 potatoes, cooked
  • 1 package cream cheese, 190 g
  • flour, for breading
  • 2 eggs, beaten, for breading
  • Bimbo ® classic breadcrumbs, for breading
  • cooking spray, for frying

  • Heat a skillet over medium heat with the oil and cook the onion with the garlic, add the fish, chipotle, cilantro, season with salt and pepper. Remove and cool.
  • In a bowl, using a masher, mash the potatoes and mix with the cream cheese until smooth. Add the previous mixture and form the croquettes using a little flour to shape them. Refrigerate for 20 minutes.
  • Bread the croquettes by dipping them in egg and classic Bimbo® breadcrumbs, making sure to cover all sides well.
  • In a medium skillet with a little cooking spray, cook the croquettes until golden brown. Drain on paper towels.
  • Serve with a salad.
