Fish Fillet in Aluminum with BBQ

This recipe is very special to me because it was one of my husband's favorite dishes when we first got married; it was my mom's recipe, but when I started preparing it, I added new ingredients like Hunt’s® Chipotle BBQ Sauce, which completely changed its flavor. My confidence in cooking it is satisfying, as it is a very easy, nutritious, and delicious recipe.

  • 4 white fish fillets
  • 1 potato, chopped into cubes
  • 1 chayote, diced
  • 2 carrots, peeled and diced
  • 300 grams Manchego cheese, grated
  • 90 grams butter
  • 1 cup Hunt's ® BBQ chipotle sauce
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch chicken seasoning

  • In a pot with water, cook the vegetables for 10 minutes over medium heat. Add a pinch of chicken seasoning (to taste). Set aside.
  • For the fish fillet, season each side with salt and pepper (either whole or cut in half). Set aside.
  • Spread butter on four pieces of aluminum foil, place the fish fillets on top, and add Hunt’s® Chipotle BBQ Sauce.
  • Place Manchego cheese on each one, on top of the Hunt’s® Chipotle BBQ Sauce, continue with the vegetables, add small cubes of butter as a final touch, close the aluminum foil by folding it well so that the contents do not spill out.
  • Once all the packages are ready, steam for 15 minutes or until the fillet is cooked and the Manchego cheese is melted. Serve.
