4 guajillo chiles, cleaned and hydrated
1 ancho chile, clean and hydrated
1/4 cups pineapple juice
1 clove garlic
1/4 onions
2 cloves
1 pinch cumin
salt
vegetable oil
3 cups white fish, in medium cubes
8 flour tortillas
2 cups Manchego cheese, grated
green salsa
onion, finely chopped
cilantro, finely chopped
pineapple, in cubes

Blend the guajillo chiles, ancho chile, pineapple juice, garlic cloves, onion, clove, cumin, and salt until forming an adobo.
Sauté the fish in a hot pan with oil for 3 minutes, pour in the adobo and cook for 5 minutes or until fully cooked.
Heat a tortilla on a griddle, add the cheese and seafood, close with another tortilla and cook for 2 minutes on each side or until the cheese melts.
Serve the fish gringa and accompany with green sauce, onion, cilantro, pineapple, and Sidral Mundet® Apple Flavor.
