Fish Stuffed Chile

  • 1 tablespoon vegetable oil, for frying
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomato, finely chopped
  • 1/4 cups chipotle chile
  • 2 cups fish fillet, tilapia
  • 1/2 cups cilantro, finely chopped
  • 1/4 cups lime juice

  • 4 Poblano chiles
  • 1 cup Manchego cheese, or 1/2 cup of mozzarella cheese for a lighter version

  • In a skillet, fry the onion, garlic, tomato, chipotle, fish, cilantro, lemon, salt, pepper, and cook for 10 minutes.
  • Roast the chiles on a griddle until they turn black. Place them in a bag and sweat them for 20 minutes. Remove from the bag and, using a knife, peel them, open them up, and shred them.
  • Stuff with the fish, add the Manchego cheese, and bake until golden.
  • Serve and accompany with rice.
