Fried Tilapia
Carlos Lieja
In my family, we love to eat fried tilapia on Fridays during Holy Week. Fried tilapia is economical, very tasty, and really easy to prepare. Even people who don't eat fish love this recipe.

Heat the oil in a deep skillet so that you can submerge the fish.
Rinse the tilapia and dry it. Make shallow diagonal cuts in the fish. Season the fish with salt and pepper, and dust it with flour.
Add garlic and lemon peel to the skillet with the oil. Once the oil is hot, introduce the tilapia. Fry for about 15 minutes or until cooked through.
Place the fish in a colander and then transfer it to paper towels to remove excess grease.
