1 kilo dried cod
500 grams new potatoes
5 cloves garlic
1 liter olive oil
200 grams almonds, peeled
1 jar green olives
1 jar capers
1 jar güero chile
1 bunch aromatic herbs
pepper, to taste
salt, to taste

To desalinate the cod, immerse it in hot water, changing the water every 30 minutes. Repeat the procedure 5 times to remove the salt.
Cook the cod for 1 hour, drain, and shred. Set aside.
Cut the baby potatoes in half and cook them in salted water. Remove from water and set aside.
Finely chop the garlic, heat the oil, and fry until golden. Add the cod and cook for 30 minutes over low heat.
Add the almonds, olives, capers, yellow chilies, herbs, and baby potatoes, mix until combined, and cook for an additional 30 minutes.
Adjust the seasoning and serve.
