White Cod

A very traditional recipe during Christmas festivities, cod. Here we present a delicious preparation, white cod. It is a very simple recipe to prepare, where the flavors of the potato, almond, and yellow chilies make this dish a delicacy.

  • 1 kilo dried cod
  • 500 grams new potatoes
  • 5 cloves garlic
  • 1 liter olive oil
  • 200 grams almonds, peeled
  • 1 jar green olives
  • 1 jar capers
  • 1 jar güero chile
  • 1 bunch aromatic herbs
  • pepper, to taste
  • salt, to taste

  • To desalinate the cod, immerse it in hot water, changing the water every 30 minutes. Repeat the procedure 5 times to remove the salt.
  • Cook the cod for 1 hour, drain, and shred. Set aside.
  • Cut the baby potatoes in half and cook them in salted water. Remove from water and set aside.
  • Finely chop the garlic, heat the oil, and fry until golden. Add the cod and cook for 30 minutes over low heat.
  • Add the almonds, olives, capers, yellow chilies, herbs, and baby potatoes, mix until combined, and cook for an additional 30 minutes.
  • Adjust the seasoning and serve.
