Place the butterflied red snapper in a baking dish, season with salt and pepper, pour the Doña María Pibil Sauce and marinate for 30 minutes.
Place a banana leaf and the fish on a rack, brush with more Doña María Pibil Sauce and place a slice of bell pepper and onion on top.
Cook the fish over the coals for 14 minutes or until well cooked.
Serve the zarandeado fish al pibil and accompany with tortillas, lime, and salsa.
