Zarandeado Fish al Pibil

  • 1/2 red onions, in slices
  • banana leaf

  • Place the butterflied red snapper in a baking dish, season with salt and pepper, pour the Doña María Pibil Sauce and marinate for 30 minutes.
  • Place a banana leaf and the fish on a rack, brush with more Doña María Pibil Sauce and place a slice of bell pepper and onion on top.
  • Cook the fish over the coals for 14 minutes or until well cooked.
  • Serve the zarandeado fish al pibil and accompany with tortillas, lime, and salsa.
