Four Seasons Pizza

This four seasons pizza is made with typical ingredients from each season of the year, making it ideal for all tastes. To top it off, this pizza recipe is made with homemade dough, roasted tomato sauce, and is paired with Strongbow®.

  • 3/4 cups water, warm, for the dough
  • 2 tablespoons olive oil, for the dough

  • 1 envelope dry yeast, for the dough
  • 8 tomatoes, roasted
  • 2 cloves garlic, roasted

  • 1/2 cups artichoke
  • 1/2 cups cherry tomato
  • 1/4 cups fresh basil leaf
  • 1/4 cups button mushroom, variety of mushrooms (shiitake, champignon)
  • 1/4 cups salami, sliced
  • 1/4 cups Spanish chorizo, sliced

  • Mix the warm water, olive oil, and salt with a mixer and the hook attachment. When the salt dissolves, add the flour and yeast, then mix very well until fully integrated to form a smooth, homogeneous, and well-kneaded dough. Then, transfer the dough to a bowl previously greased with olive oil and cover with plastic wrap. Let the pizza dough rest to ferment for 1 hour.
  • While the dough is fermenting, prepare the sauce. Blend the roasted tomatoes, roasted garlic, a little water, and salt for 3 minutes or until very smooth. Then, heat a skillet over medium heat, pour in olive oil, add the sauce, and cook for 5 minutes or until reduced and slightly thickened.
  • Once the pizza dough has fermented, punch it down and stretch it onto a pizza tray, form the edge, spread the sauce, sprinkle the cheese, and create an imaginary cross to divide the ingredients. In one quarter place artichokes, in another cherry tomatoes and basil, in the next arrange the mushrooms, and in the last, the cold cuts.
  • Bake the four seasons pizza at 200 °C for 25 minutes or until the crust is nicely browned.
  • Serve the four seasons pizza with a little olive oil and chili oil and enjoy with Strongbow® Gold Apple.
