Fried Chicken Pizza

  • 2 chicken breasts, boneless, cleaned
  • 1 1/4 cups wheat flour, for the batter
  • 3/4 cups cornstarch, for the batter
  • 2 tablespoons garlic powder, for the batter
  • 1 tablespoon onion powder, for the batter
  • 1 tablespoon cumin powder, for the batter
  • 3 tablespoons paprika, for the batter
  • 1 teaspoon ground oregano, for the batter
  • 1 tablespoon pepper, for the batter

  • 1 1/2 cups sparkling water, for the batter
  • 1 cup wheat flour, for breading
  • 1 1/2 cups corn flakes, corn, chopped, for breading

  • 1 cup Mozzarella cheese, grated
  • 1/2 cups deli ham, in cubes
  • 1/2 cups pineapple, in triangles
  • American cheese, melted, for serving

  • Using a knife, open the chicken breast in half to obtain a larger and thicker piece. On a flat surface, using two plastics for support, flatten the breast with a meat mallet or rolling pin, remembering that the thickness should not be too thin, just wide and, if possible, round. Set aside until use.
  • In a bowl, mix the wheat flour with the corn starch, garlic powder, onion powder, cumin, paprika, oregano, pepper, and salt until combined. Add the egg and gradually pour in the sparkling water, mixing with a whisk until you have a slightly thick mixture; you will know it is ready when it easily detaches from the whisk.
  • Mix the wheat flour with the corn cereal in a wide and slightly deep container.
  • Coat the chicken breasts thoroughly in the spice and sparkling water mixture, place on the plate with flour and cereal, covering completely by pressing down with the palm of your hand. Repeat until all the breasts are coated.
  • In a pan with enough hot vegetable oil, fry the breaded breasts; remember to do this at a low temperature and with enough oil to ensure the chicken cooks through, about 10 minutes. Drain on paper towels and repeat until all pieces are done.
  • Preheat the oven to 180°C.
  • Place the fried chicken pieces on a baking tray. Spread with prepared tomato sauce, add a pinch of oregano, grated mozzarella cheese, ham, and pineapple to taste. Bake for 10 minutes at 180°C, checking the tray to avoid over-browning the chicken. Remove from the oven, serve hot, and accompany with melted yellow cheese to taste.
