Using a knife, open the chicken breast in half to obtain a larger and thicker piece. On a flat surface, using two plastics for support, flatten the breast with a meat mallet or rolling pin, remembering that the thickness should not be too thin, just wide and, if possible, round. Set aside until use. In a bowl, mix the wheat flour with the corn starch, garlic powder, onion powder, cumin, paprika, oregano, pepper, and salt until combined. Add the egg and gradually pour in the sparkling water, mixing with a whisk until you have a slightly thick mixture; you will know it is ready when it easily detaches from the whisk.
