Gallo Pinto

This delicious traditional recipe from Costa Rica has a base of beans and rice and can be served with fried plantain and tomato; you can also add a spiced red sauce to the gallo pinto. Try it and enjoy a Hispanic food recipe like no other.

  • 3 guajillo chiles, soaked in hot water
  • 1/4 onions
  • 1 cup carrot, sliced
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • 1 tablespoon vinegar
  • 1 teaspoon lime
  • 1/2 cups vegetable broth
  • salt
  • 1 tablespoon butter
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup bell pepper, cubed
  • 1 cup beans, cooked
  • 1 cup rice, cooked
  • 1/2 cups cilantro
  • vegetable oil
  • 1 egg
  • tomato

  • For the sauce, blend the guajillo pepper, carrot, onion, cumin, vinegar, lemon, salt, sugar, and vegetable broth for 3 minutes. Set aside.
  • Heat a skillet over medium heat, melt the butter, and add the onion, garlic, and bell pepper, sauté for 5 minutes, add the beans, rice, 2 tablespoons of the sauce you made, and cilantro, cook for 3 more minutes.
  • For the egg, heat a skillet over medium heat, add oil, and fry the egg for 3 minutes.
  • Serve the rice on a plate, top with slices of plantain, tomato, and place the fried egg on top.
