Glazed Meatloaf

Be amazed by the versatility brought to you by McCormick and the sweet and sour flavors of jams with a slightly spicy touch, which will be the special ingredient in all your dishes.

  • 300 grams ground beef
  • 300 grams ground pork
  • 1 cup Spanish chorizo, fried
  • 1 tablespoon McCormick® mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ketchup
  • 1 egg
  • 1/2 cups breadcrumbs
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons parsley, finely chopped

  • 20 slices bacon
  • 1 cup McCormick® chipotle chili raspberry jam
  • 1 cup red wine, for the glaze
  • 1/2 cups beef broth, for the glaze
  • 2 cups new potatoes, for the glaze
  • 1 cup carrot, for the glaze
  • 1 cup peas, for the glaze
  • rosemary, for the glaze

  • In a bowl, mix the ground beef with the ground pork, add the chorizo, McCormick® mustard, onion powder, garlic powder, ketchup, egg, bread crumbs, cilantro, parsley, season with salt and pepper, and mix until combined. Set aside.
  • On a board, lay the slices of bacon slightly overlapping to form a base, place the previous mixture on top of the bacon, and roll it up, covering the meat with the bacon until forming a roll. Wrap the roll with cling film and press to compact. Freeze for 1 hour.
  • In a skillet over medium heat, add a little oil and sear the meat roll for 5 minutes on each side; then add the McCormick® raspberry jam with chipotle, the red wine, beef broth, rosemary, baby potatoes, season with salt and pepper, cover, and cook on low heat for 20 minutes.
  • Once the time has passed, add the carrots and cook for 10 more minutes, finally, add the peas and cook for 5 minutes. Constantly baste the meatloaf with the sauce throughout the cooking process.
  • Slice the meatloaf, serve with the glaze and vegetables, and accompany with spaghetti carbonara. Enjoy with a clericot.
