In a bowl, mix the ground beef with the ground pork, add the chorizo, McCormick® mustard, onion powder, garlic powder, ketchup, egg, bread crumbs, cilantro, parsley, season with salt and pepper, and mix until combined. Set aside.
On a board, lay the slices of bacon slightly overlapping to form a base, place the previous mixture on top of the bacon, and roll it up, covering the meat with the bacon until forming a roll. Wrap the roll with cling film and press to compact. Freeze for 1 hour.
In a skillet over medium heat, add a little oil and sear the meat roll for 5 minutes on each side; then add the McCormick® raspberry jam with chipotle, the red wine, beef broth, rosemary, baby potatoes, season with salt and pepper, cover, and cook on low heat for 20 minutes.
Once the time has passed, add the carrots and cook for 10 more minutes, finally, add the peas and cook for 5 minutes. Constantly baste the meatloaf with the sauce throughout the cooking process.
Slice the meatloaf, serve with the glaze and vegetables, and accompany with spaghetti carbonara. Enjoy with a clericot.
