Gratin Zucchini with Tomato Sauce

  • 1/2 cups onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomato, finely chopped
  • 1 cup ear corn, white, shelled
  • 4 winter squash, Italian, sliced
  • 1 cup tomato purée
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup cherry tomato
  • 1 cup Oaxaca cheese, shredded

  • Preheat the oven to 200° C.
  • Heat a skillet over medium heat with olive oil and cook the onion and garlic. Add the tomato, corn, and zucchini, cook for 3 minutes, and add the tomato puree, spices, and season to taste.
  • Place the previous preparation in oven-safe baking dishes. Arrange the cherry tomatoes and cover with shredded Oaxaca cheese. Bake for 15 minutes, covering with aluminum foil until the cheese melts. Serve hot.
