Gratinated Carnitas Gorditas

  • 3 cups lard
  • 500 grams pork ribs
  • 500 grams pork chump
  • 1 cup orange juice
  • 1 orange, cut in half
  • 1 cup evaporated milk
  • salt
  • 1 bunch herb bundle
  • 6 allspice berries
  • 1/2 heads garlic
  • 1/2 onions
  • 1 cup asadero cheese
  • 500 grams masa dough
  • 1 tablespoon lard
  • 1/2 teaspoons salt
  • water
  • onion, for serving
  • cilantro, for serving
  • lime, for accompaniment
  • green salsa, for accompaniment

  • For the carnitas, in a pot add the lard, the rib, and the pork meat.
  • Pour in the orange juice, the orange, the evaporated milk, add the salt, the herbs, the peppercorns, the garlic, and the onion.
  • Cook for 2 hours or until the meat is tender and cooked.
  • On a cutting board and with the help of a knife, cut into small pieces.
  • For the gorditas, in a bowl mix the corn dough with the lard, the salt, and the water, remember to pour the water slowly until the consistency is manageable and slightly moist.
  • To form the gorditas, with your hands make a ball of approximately 40 grams, flatten gradually until you obtain a circle half a centimeter thick; place on a hot griddle with a drizzle of oil and cook for 6 minutes on low heat on both sides. Remove from heat.
  • With a serrated knife, open the gorditas along the edge horizontally without cutting all the way through. Fill with cheese and carnitas, heat on a griddle for 5 more minutes to gratin.
  • Serve with onion and cilantro and accompany with limes and green sauce. Enjoy.
