Gratinated Vegetable Lasagna

  • 1 can Golden corn on Del Monte® grains, 400g, for the vegetable filling
  • 2 cans Del Monte® Vegetable Salad, 400 g each, for the vegetable filling
  • 1 cup mascarpone cheese, for the filling
  • 1 cup requesón, for the filling
  • 1 cup Parmesan cheese, for the filling
  • 1 egg, for the filling
  • 1 tablespoon nutmeg, ground, for the cheese filling

  • pepper, for the cheese filling
  • 2 cups spinach, precooked, for the cheese filling
  • 1 tablespoon butter, for the vegetable filling
  • 1 tablespoon garlic, finely chopped, for the vegetable filling
  • 1/2 cups onion, finely chopped, for the vegetable filling
  • 1 cup red bell pepper, in small cubes, for the vegetable filling
  • 2 boxes Del Monte® Spiced Tomato Puree, for the vegetable filling (210 g each)
  • 2 tablespoons basil, finely chopped, for the vegetable filling
  • 1 tablespoon oregano, for the vegetable filling

  • 1 package lasagna sheets, precooked
  • 1 cup Mozzarella cheese, grated, for topping the lasagna

  • In a bowl, mix the mascarpone cheese with the ricotta, parmesan cheese, egg, nutmeg, and spinach until everything is fully combined. Reserve in the refrigerator and cover with non-stick plastic wrap.
  • In a pot, heat the butter over medium heat and cook the onion and garlic for 2 minutes or until they change color. Add the Del Monte® golden corn kernels, the Del Monte® vegetable salad, and the red bell pepper, and cook for 2 more minutes.
  • Add the Del Monte® seasoned tomato puree to the pot of vegetables and let it cook for 5 minutes over low heat. Season with basil, oregano, salt, pepper, and mix until everything is combined. Reserve.
  • To assemble the lasagna: In a rectangular baking dish, place a layer of pre-cooked lasagna pasta, then a layer of vegetable mixture, followed by a layer of cheese mixture, and continue until the mold is filled, finishing with a cheese mixture. Cover everything with a layer of mozzarella cheese and bake at 180 °C for 20 minutes.
  • Serve the vegetable lasagna in the same baking dish.
