In a bowl, mix the mascarpone cheese with the ricotta, parmesan cheese, egg, nutmeg, and spinach until everything is fully combined. Reserve in the refrigerator and cover with non-stick plastic wrap. In a pot, heat the butter over medium heat and cook the onion and garlic for 2 minutes or until they change color. Add the Del Monte® golden corn kernels, the Del Monte® vegetable salad, and the red bell pepper, and cook for 2 more minutes.
