Green Enchiladas Filled with Bell Pepper

Easy to make enchiladas, nutritious and healthy. If you are vegan, they are great for you since they contain no animal products. If you are not, I know you will love this version.

  • 1/2 kilos tomatillo
  • 1 serrano chile
  • 1/4 onions
  • 1 clove garlic
  • 10 grams fresh cilantro
  • 1 teaspoon salt
  • 1 cup water
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 onion, chopped
  • 1 teaspoon coconut oil
  • salt
  • 250 grams corn tortillas
  • alfalfa sprouts, to serve
  • onion, chopped, for serving

  • Cook the tomatoes, onion, and garlic in a pot with the cup of water for 15 minutes.
  • Finely chop the bell peppers and onion.
  • In a skillet, add the coconut oil and the bell peppers; season. Fry until cooked.
  • Shape the tacos with the bell peppers and set aside on a plate.
  • Blend the cooked tomato with cilantro.
  • Pour the sauce over the tacos.
  • Garnish with onion and alfalfa sprouts.
