You have never tasted lettuce hearts like these! Delicious grilled lettuce hearts, accompanied by spicy habanero shrimp and an orange vinaigrette that creates an irresistible contrast.
Cut the rustic Eva® lettuce hearts in half. Add olive oil and salt.
Heat a grill pan very well over high heat, and grill the hearts on both sides for about 5 to 7 minutes or until marked. Set aside.
For the filling, in a medium skillet, heat the butter and cook the shallot for a few minutes. Add the tomato, shrimp, habanero chili, and spices. Cook for about 5 minutes or until the flavors are combined. Season with salt and pepper. Set aside.
For the vinaigrette, in a bowl, combine the vinegar with the orange juice, mustard, sugar, chili seeds, salt, and pepper. Add the olive oil in a steady stream until fully emulsified. Set aside.
Serve the grilled hearts with a little shrimp on top. Add the vinaigrette and garnish with rings of guajillo chili and fried parsley.
