This irresistible recipe for grilled watermelon with salmon will amaze you with its exquisite and fantastic sweet and sour flavor. Cook it for special occasions or just to share with your family and friends.
500 grams fresh salmon, cut into rectangles without skin of 100 g each
750 grams watermelon, cut into rectangles of 150 g each
1/2 cups hibiscus flower
2 cups water
3 tablespoons sugar
1 lemon
1/2 cups olive oil
1 bunch fresh dill
3 teaspoons salt
2 teaspoons ground black pepper

Heat the water and add the hibiscus flower to make an infusion, once the water changes color (to deep red), add the sugar (aiming for a light honey consistency).
Remove the skin from the salmon and cut into rectangles, then season with salt and pepper.
Cut the watermelon into rectangles the size of the salmon, marinate with olive oil, salt, and pepper. Grill at high temperature on all sides.
To serve, drizzle the plate with the Jamaica honey, place lemon slices on one side and on the other place the watermelon and on top of it the salmon, finally garnish with a bit of dill.
