Ingredients: 500 grams fresh salmon, cut into rectangles without skin of 100 g each; 750 grams watermelon, cut into rectangles of 150 g each; 1/2 cups hibiscus flower; 2 cups water; 3 tablespoons sugar; 1 lemon; 1/2 cups olive oil; 1 bunch fresh dill; 3 teaspoons salt; 2 teaspoons ground black pepper

Heat the water and add the hibiscus flower to make an infusion, once the water changes color (to deep red), add the sugar (aiming for a light honey consistency). Remove the skin from the salmon and cut into rectangles, then season with salt and pepper.
