  • In a bowl, mix the egg, sugar, vanilla extract, flour, milk, and butter. Whisk until combined. Set aside.
  • Heat a crepe maker over medium-low heat, pour a ladle of the mixture and spread it with a spatula. Cook each crepe for 3 minutes on both sides, add the manchego cheese, Oaxaca cheese, and ham, then fold into thirds.
  • Serve the ham and cheese crepes with adobo chipotle chili.
