  • Stuff the chicken breast with slices of ham and cheese, then season with salt and pepper.
  • Grease a baking dish with butter and arrange the chicken breasts. Cover with aluminum foil and bake for 20 minutes.
  • For the sauce: melt the butter and lightly sauté the onion. Add the pineapple, vinegar, sugar, ginger, cumin, salt, and pepper. Simmer for 30 minutes or until the pineapple has caramelized.
  • Serve a bit of the sauce on the plate, place the chicken breast, and garnish with pineapple and cilantro leaves. Serve with mashed potatoes.
