  • 2 cups whole-wheat flour, for the dough
  • 9 grams yeast, fresh, for the dough
  • 3/4 cups water, for the dough
  • 1/2 teaspoons salt, for the dough
  • 1/2 cups La Botanera® reduced in sodium
  • 1/2 cups tomato sauce
  • 1/2 cups Manchego cheese, grated
  • 1/2 cups red bell pepper, in small cubes
  • 1/2 cups cheddar cheese, in small cubes
  • 1/2 cups yellow corn kernels
  • 1/2 cups green bell pepper, in small cubes
  • 1/2 cups broccoli, precooked, in florets
  • 1/2 cups red onion, in small cubes
  • La Botanera® reduced in sodium

  • Mix the flour, fresh yeast, water, and salt in a bowl. Knead with the hook attachment of your mixer until integrated and obtain a homogeneous dough.Place the pizza dough in a previously greased bowl. Cover with non-stick plastic and let it ferment for 1 hour or until it doubles in size.
  • Mix La Botanera® reduced sodium with tomato puree. Set aside.
  • Add a little flour to a clean surface and roll out with a rolling pin until you achieve a thickness of 3 mm. Transfer the dough to a pizza tray.
  • Add the sauce, spread it over the entire dough, and add the cheese. Then, add the ingredients from the center outwards, starting with the red bell pepper, orange bell pepper, yellow corn kernels, green bell pepper, broccoli, and red onion, forming a rainbow.
  • Bake the vegetable pizza at 200 °C for 10 minutes. Serve and accompany with La Botanera® reduced sodium.
