Homemade Cheese Pizza

  • 2 1/3 cups flour, for the dough
  • 1 1/4 cups water, for the dough
  • 5 grams dry yeast, for the dough
  • 1 tablespoon olive oil, for the dough
  • 1 teaspoon salt, for the dough

  • 1 cup Mozzarella cheese, grated
  • 1 cup cheddar cheese, grated

  • Preheat the oven to 180°C.
  • For the dough, in a bowl mix the flour with the water, dry yeast, olive oil, salt, and knead with your hands until you have an elastic and homogeneous dough.
  • Grease a bowl with a little oil and place the dough inside. Cover with plastic wrap and let it rise until it doubles in size.
  • In a bowl, mix the mozzarella cheese, cheddar cheese, and manchego cheese.
  • On a clean surface, cut half of the dough and roll it out with a rolling pin until you have a circle the size of your tray, with a thickness of 3 mm.
  • Place the dough on the tray and add the tomato sauce, the cheese mixture, and bake for 20 minutes.
  • Cut into slices and serve.
