Homemade Mole Poblano

A simplified version of the delicious mole poblano. This mole recipe will impress all your guests and beyond.

  • 2 chickens, in pieces
  • 8 tablespoons lard
  • 4 tablespoons toasted sesame seeds
  • 8 ancho chiles
  • 2 pinches pepper
  • 5 cloves garlic
  • 4 mulato chiles
  • 3 cloves
  • 4 leaves bay
  • 2 bolillo rolls, sliced and fried
  • 1 1/2 onions
  • 1 cinnamon stick
  • 2 corn tortillas
  • 2 chocolate bars

  • Soak the chiles in hot water and blend them with the garlic, bay leaf, sesame seeds, cloves, black pepper, cinnamon, onion, fried bolillo, chocolate, and the toasted tortilla until a paste forms.
  • Boil the chicken until well cooked.
  • Fry the mixture with the lard, season with salt, and add enough chicken broth to achieve a good thickness. Incorporate the chicken. Serve.
