Homemade Potato Cakes with Cotija Cheese

These are the best potato cakes, just like mom's. Soft on the inside, crispy on the outside, and the best part is that they have an intense cotija cheese flavor that makes all the difference.

2 potatoes, without skin
1 cup Cotija cheese, crumbled
1 egg
1 teaspoon salt
1/4 cups cornstarch
1 cup vegetable oil
lettuce, to accompany
tomato, to accompany
avocado, to accompany
cucumber, to accompany

In a pot over medium heat, place the potatoes with water and let cook for 25 minutes or until they are soft. Drain.
In a bowl, place the potatoes and mash them with a masher. Add the egg, cotija cheese, cornstarch, and salt. Mix until combined.
Shape the potato cakes with your hands and set aside.
In a skillet over medium heat, heat the oil and place the cakes, cooking until they are golden brown. Drain on paper towels.
Serve with a salad.
