  • 1 white onion, cut into pieces
  • 2 cloves garlic, cut into pieces
  • 8 tomatillos, cut in half
  • 4 serrano chiles, deveined
  • 1 tablespoon cumin, whole

  • 2 egg yolks
  • 3 cups chicken breast, cooked and shredded

  • For the green sauce, heat a skillet over medium heat with a teaspoon of oil, fry the onion with the garlic until golden, and add the tomatoes. Cook until they change color, add the chiles, cumin, season with salt and pepper, fill with chicken broth, and cook for about 10 minutes. Remove from heat and blend with cilantro until smooth.
  • In a bowl, beat the egg whites until they reach a stiff peak with a pinch of salt. Add the yolks one by one while continuing to beat. Add the chicken and gently fold to combine.
  • Using two spoons, form patties and cook in a skillet over low heat with a little cooking spray. Once cooked, remove and set aside.
  • Heat the sauce in a skillet over medium heat, and when it starts to boil, add the patties. Season with salt and pepper, cook for a few minutes, and serve with Cotija cheese and fresh cilantro.
