How to make mole to sell?

  • vegetable oil
  • 3 pasilla chiles
  • 5 ancho chiles
  • 8 mulato chiles
  • 75 grams animal crackers
  • 5 tortillas
  • 100 grams pecans
  • 100 grams almonds
  • 100 grams peanuts
  • 100 grams pumpkin seeds
  • 100 grams sesame seeds
  • 2 cloves
  • 2 pepper
  • 1 head garlic, without shell
  • 1/4 onions
  • 3 plantains
  • 100 grams raisins
  • 1 apple, seedless, sliced
  • 3 tablespoons lard, to fry the paste
  • 1/2 cups Mexican chocolate, grated, 1 tablet
  • 1 cup piloncillo, granulated, a cone

  • Heat a pot with vegetable oil and fry all the ingredients except the chocolate and piloncillo; change the oil as many times as you deem necessary, ideally 2. Give each ingredient enough time to fry without burning. Then wait for all the ingredients to cool.
  • Grind all the fried ingredients in a mill or processor until you obtain a uniform and smooth paste, but remember not to remove all the fat from your mole paste.
  • Heat a pot on low temperature with the lard and fry the paste, chocolate, and piloncillo for 5 minutes.
  • Remove from heat, cool, and store.
