The delicate flavor of huitlacoche will make this Mexican snack delicious, combined with epazote, onion, garlic, and a spicy touch of serrano pepper. All this accompanied by oaxaca cheese. These quesadillas made with blue masa are totally delicious.
Heat the oil in a pan over medium heat and cook the onion with the garlic and huitlacoche. Add the epazote, season to taste with salt. Set aside.
In a bowl, knead the blue corn dough with a little water and lard, adding a bit of salt. The dough should be soft and moist.
Form small balls of dough and make tortillas in a tortilla press. Cook on a hot griddle until cooked and puffed. Add oaxaca cheese to melt and a little huitlacoche filling, close into quesadillas.
Serve with a molcajete sauce.
