  • 1 tablespoon paprika, for the marinade
  • 1 tablespoon cayenne pepper, for the marinade
  • 1 tablespoon dried morita chile, powder, for the marinade
  • 1 tablespoon salt, for the marinade
  • 1 tablespoon pepper, for the marinade
  • 1/4 cups olive oil, for the marinade
  • 1 pork ribs, 1-2 kilos
  • 2 tablespoons butter, for the bbq sauce
  • 1 cup tomato sauce, for the bbq sauce
  • 1/2 cups ketchup, for the bbq sauce
  • 1/4 cups Worcestershire sauce, for the bbq sauce
  • 1/2 cups ale beer, for the bbq sauce
  • 1/2 cups raw sugar, for the bbq sauce
  • 1 tablespoon garlic powder, for the bbq sauce

  • 1 chipotle chile, for the bbq sauce
  • 1 tablespoon cayenne pepper, for the bbq sauce
  • 1 cup canned pineapple syrup, for the bbq sauce
  • 1/2 cups apple cider vinegar, for the bbq sauce
  • 1/4 cups chipotle chile in adobo sauce, for the bbq sauce
  • 2 tablespoons Tabasco sauce, for the bbq sauce
  • 1/4 cups honey, for the bbq sauce
  • 3 cups ale beer, for cooking the ribs

  • For the marinade, in a bowl, place all the powders with the olive oil and mix until you achieve a thick and spreadable consistency. Marinate the rack with the previous preparation for 1 hour in the refrigerator.
  • For the BBQ sauce, heat a small pot over medium heat with the butter, add all the BBQ sauce ingredients one by one and cook until it thickens, season with salt and pepper and set aside.
  • Heat a deep pan over high heat, sear the ribs until no raw surface remains. Baste the ribs with BBQ sauce until they are completely covered, fill the baking dish with dark beer, cover with aluminum foil, and cook for two hours or until tender, constantly basting with the juices.
  • Once the ribs are cooked, remove from cooking, cut and baste with more BBQ sauce. Serve with mac & cheese and enjoy.
