Keto Sea and Land Skewers

These skewers are ideal for the keto challenge, as they are low in carbohydrates and rich in protein. This shrimp and beef fillet skewer recipe is accompanied by a fresh cilantro dressing.   • 1 cup zucchini
  • 1 cup red bell pepper
  • 1 cup shrimp, fresh, medium
  • 1 cup yellow bell pepper
  • 1 cup beef tenderloin, in medium cubes, for skewers
  • 1 cup green bell pepper
  • cooking spray
  • 1 cup mayonnaise, light
  • 1/4 cups cilantro
  • 1/4 cups parsley
  • 1 tablespoon lime juice
  • 1 tablespoon garlic powder
  • pinches salt

  • On a cutting board, slice the zucchini. Likewise, cut the bell peppers into medium squares and set aside.
  • Insert the zucchini, red bell pepper, shrimp, yellow bell pepper, beef fillet, green bell pepper onto skewers and repeat the process until fully loaded.
  • Cook on a grill with a little cooking spray at medium-high temperature for 15 minutes.
  • For the cilantro dressing: Blend the mayonnaise, cilantro, parsley, lime juice, garlic powder, and salt until you have a smooth mixture.
  • Serve the skewers accompanied by the cilantro dressing and enjoy.
