  • 1 cauliflower, in florets
  • 1 tablespoon olive oil
  • salt

  • 1 cup low-fat cream cheese
  • 1/4 cups sesame seeds
  • 4 nori
  • 1 cup red bell pepper, cut into strips
  • 1 cup cucumber, cut into strips
  • 1 cup avocado, cut into cubes
  • soy sauce

  • In a food processor, add the cauliflower and process for 1 minute. Set aside.
  • In a pan over medium heat, heat the oil, cook the cauliflower for 5 minutes, season with salt and pepper. Let cool and set aside.
  • In a bowl, mix the cauliflower with the cream cheese and sesame until you have a homogeneous mixture. Set aside.
  • On a bamboo mat, place the nori seaweed, the cauliflower rice, fill with bell pepper, cucumber, and avocado, roll tightly to compact.
  • On a cutting board, slice the sushi, place it on a flat plate, and serve with soy sauce.
