Meat Pies with Potato

Try this recipe to make meat pies, a dish originating from the state of Hidalgo that was introduced to Mexico by the British. This pie consists of a preparation similar to that of a pastry, which can be flaky and is filled with meat and potato. You will love it!

  • 4 cups flour, for the dough
  • 1 cup vegetable shortening, 125 g, for the dough
  • 1 cup butter, 125 g, for the dough
  • 1 teaspoon salt, for the dough
  • water, for the dough
  • vegetable oil, for the filling
  • 1 cup onion, for the filling
  • 1/2 cups leek, for the filling
  • 2 tablespoons serrano chile, for the filling
  • 2 cups potato, for the filling
  • 4 cups ground meat, for the filling
  • 2 tablespoons parsley, for the filling
  • salt
  • pepper
  • egg yolk, for brushing
  • pickled chiles, for serving

  • On a table, add the dry ingredients and mix in the lard and butter using a fork, work the dough until it reaches a sandy texture. Let it rest for 30 minutes.
  • For the filling, sauté the onion, leek, and chili, add the potatoes, ground meat, and cook for 10 minutes, add the parsley, season with salt and pepper. Let cool and set aside.
  • On a surface, roll out the dough, cut circles of 10 cm in diameter, and fill with meat.
  • Place on a baking sheet, brush with egg, and bake for 25 minutes at 180°C.
  • Serve accompanied by pickled chilies.
