BBQ Pork Medallions with Cherries

Pork medallions with Hunt's original BBQ and maraschino cherries, garnished with watercress. A different and delicious dish that no one will be able to resist.

  • 8 pork medallion, 1 cm thick
  • 1 tablespoon olive oil  1 tablespoon olive oil
  • 2 cups Hunt´S ® original bbq sauce
  • 1 cup water 1 cup water
  • 400 grams maraschino cherry, without syrup
  • 4 tablespoons corn syrup 4 tablespoons corn syrup

  • 2 teaspoons nutmeg powder

  • Brush olive oil on the medallions and season with salt and pepper on both sides.
  • Preheat a grill or non-stick skillet over high heat and cook the medallions for 2 minutes on each side. Remove from the skillet and set aside.
  • Pour Hunt's® Original BBQ Sauce into another skillet. Add water and heat over low for 1 minute, stirring continuously.
  • Add the cherries, corn syrup, ground cinnamon, nutmeg, cloves, and salt to the skillet. Heat for 5 minutes, stirring constantly. Remove the cloves.
  • Add the medallions and heat for 1 more minute before serving.
  • Serve accompanied by fresh watercress.
