Birria Hot Dogs

Celebrate the Super Bowl with this delicious recipe! This hot dog has a touch of beef birria, which is made with a mix of guajillo, pasilla, and ancho chiles that together create the best marinade for the meat.   • 5 tomatoes, quartered, for the birria
  • 1/4 onions, for the birria
  • 3 cloves garlic, for the birria
  • 7 guajillo chiles, for the birria
  • 1 ancho chile, for the birria
  • 1 pasilla chile, for the birria
  • 2 cups water, for the birria
  • 1 teaspoon cumin, for the birria
  • 1 teaspoon oregano, for the birria

  • 1 kilo beef, shank and meat, for the birria
  • 3 bay leaves, for the birria
  • 1 garlic head, for the birria

  • For the birria: Pour the vegetable oil into a pan over medium heat, then sauté the tomatoes, onion, and garlic. Once the ingredients change color and are slightly soft, add the chiles and cook, stirring constantly to prevent burning. Pour in the water and cook for 5 minutes or until it reaches a boil. Let cool and set aside.
  • Blend the above, add cumin and oregano, and season with salt and pepper.
  • Add water, beef, bay leaves, and the head of garlic, then pour the previous preparation into a pressure cooker.
  • Cut the meat into thin strips and return it to the beef broth to prevent it from drying out.
  • To assemble your birria hot dog: Dip the hot dog bun in the birria broth, place a bit of butter on the grill, dip the sausage in the broth and brown for 5 minutes.
  • Place the shredded cheese on a non-stick pan to make a cheese crust and wrap the sausage in the crust. Serve the birria hot dogs with onion, cilantro, and chili cracklings.
