Cochinita with Natural Achiote

Cochinita pibil with refried beans and to liven up the patriotic celebrations, serve it with the traditional nopal salad and tostadas.

  • 2 kilos pork loin
  • 5 tomatillos
  • 3 cascabel chiles
  • 2 oranges, just the juice
  • 5 chipotle chiles, from a can
  • 5 cloves garlic
  • 50 grams achiote
  • 1 tablespoon oregano
  • 5 bay, (leaves)

  • Wash the meat and sprinkle it with salt, cook the tomato. Remove the tomato and soften the cascabel chili in the hot water,
  • Dissolve the achiote in the orange juice.
  • Mix all the ingredients and blend them with the orange juice and one cup of water.
  • Place the meat in a pressure cooker and add all the ground ingredients, add salt to taste. Cover the pot and count 45 minutes after it starts to whistle. Cook over medium heat.
  • Serve.
