Lamb Barbecue in a Pressure Cooker

Prepare this traditional and very tasty lamb barbecue recipe in a pressure cooker at home like you never imagined.

  • 2 kilos meat, lamb or sheep
  • 5 dried guajillo chiles, without veins or seeds
  • 1 bunch aromatic herbs
  • 1/4 onions
  • 1/2 heads garlic, cut in half
  • 3 carrots, in slices
  • salt, to taste
  • 200 grams chickpeas
  • 3 allspice berries
  • 2 liters water

  • In a pressure cooker with water, add carrots, chickpeas, chiles, onions, herbs, garlic, and salt.
  • Place a base at the bottom of the pot to separate the meat from the liquid.
  • Introduce the meat, cover the pressure cooker, and cook for 50 minutes.
  • Let the pot cool, release the steam, open it, and serve the barbecue.
