Oven-Baked Eggplants

  • 3 eggplants, halved, de-salted, and without filling
  • 2 tablespoons olive oil
  • 1/2 cups onion, finely chopped
  • 1/2 teaspoons garlic, finely chopped
  • 1 cup tomato, in small cubes and seedless
  • 3 cups ground beef
  • 1 cup button mushrooms, finely chopped
  • 1/4 cups parsley, finely chopped
  • 1 cup tomato purée
  • 1 teaspoon ground cumin
  • salt
  • ground pepper
  • 2 cups Manchego cheese, grated
  • parsley, finely chopped, for garnish

  • Heat the olive oil in a skillet over medium heat. Add the onion, garlic, and tomato, and cook for 5 minutes. Incorporate the ground meat and cook for another 10 minutes. Add the mushrooms, parsley, tomato puree, cumin, salt, and pepper, and cook over medium heat for 10 minutes. Set aside.
  • Place the eggplants on a baking tray, fill them with the ground meat, sprinkle with manchego cheese, and bake at 200 °C for 15 minutes.
  • Serve the oven-baked eggplants on a flat plate and garnish with chopped parsley.
