Zucchini Noodles Bolognese

If you are a fan of Bolognese pasta but are trying to eat fewer carbohydrates, this zucchini noodles recipe will be very helpful. It is a typical Bolognese pasta made with traditional sauce, ground beef, but instead of pasta, you will use zucchini noodles. It is super easy to prepare and has all the flavor you love.

  • 2 tablespoons olive oil, for the Bolognese
  • 3 tablespoons garlic, finely chopped, for the Bolognese
  • 1/2 cups white onion, finely chopped, for the Bolognese
  • 1/2 cups leek, finely chopped, for the Bolognese
  • 2 carrots, peeled and finely chopped, for the Bolognese
  • 1/2 cups celery, finely chopped, for the Bolognese
  • 1 kilo ground meat, beef, for the Bolognese
  • 2 tablespoons Knorr® tomato bouillon, for the Bolognese
  • 1 cup tomato purée, for the Bolognese
  • 1/4 cups red wine, for the Bolognese
  • 1/4 cups beef broth, for the Bolognese
  • 1 leaf bay, for the Bolognese
  • water
  • 1 package Eva® clam of zucchini noodles
  • Parmesan cheese, grated
  • basil, fresh
  • cherry tomato, for serving

  • For the Bolognese sauce, heat a skillet over medium heat with the olive oil and cook the garlic with the onion, add the leek, carrots, celery, meat, and Mi Tomate Knorr®. Cook until the meat has completely changed color. Add the red wine, beef broth, bay leaf, and cook for 30 minutes or until the liquid has reduced, cool and set aside.
  • In a small pot with boiling water, cook the EVA® Zucchini Noodles for 3 minutes, immerse in ice water to stop the cooking and set aside.
  • Serve the EVA® Zucchini Noodles with the Bolognese sauce, accompany with Parmesan cheese, garnish with fresh basil and cherry tomatoes.
