Bacon Meatloaf Recipe

  • 500 grams ground meat
  • 2 eggs
  • 1 cup onion, finely chopped
  • 1/3 cups parsley, finely chopped
  • 2 cloves garlic, finely chopped
  • 4 tablespoons seasoning sauce
  • 1/2 cups breadcrumbs
  • garlic salt
  • pepper
  • cooking spray, for greasing
  • 2 cups bacon, sliced
  • 2 cups Manchego cheese
  • 1/4 cups BBQ sauce, for glazing
  • 1/2 cups cherry tomato, for decorating

  • Add the ground meat, egg, onion, parsley, garlic, seasoning sauce, and breadcrumbs in a bowl, then season with garlic salt and pepper. Mix all the ingredients thoroughly.
  • Grease a small rectangular microwave-safe dish with oil and arrange the bacon slices at the bottom, covering everything, then pour in the meat.
  • Take a horizontal glass, make a hole in the center of the meat, and fill it with cheese. Place another layer of bacon and glaze with BBQ sauce.
  • Cook in the microwave for 5 minutes, alternating in 2-minute intervals, just until the bacon is lightly browned and the cheese has melted.
  • Unmold the bacon meatloaf and decorate with cherry tomatoes around.
