Mashed Potato Meatloaf

  • 4 cups ground beef, for the filling
  • 1 cup bacon, finely chopped, for the filling
  • 1 cup onion, finely chopped, for the filling
  • 1 cup carrot, peeled, cubed, for the filling
  • 1 cup red bell pepper, seedless, cubed, for the filling
  • 1 tablespoon garlic powder, for the filling
  • 1/4 cups parsley, finely chopped, for the filling
  • 1 teaspoon ground cumin, for the filling
  • 5 potatoes, cooked, cubed, for the mash
  • 1/4 cups butter, melted, for the mash
  • 1/2 cups sour cream, for the mash
  • 1/2 cups double cream cheese, cubed, for the mash

Low
  • Mix the ground beef, bacon, onion, carrot, red bell pepper, garlic powder, parsley, and cumin in a bowl, then season with salt and pepper and integrate until you obtain a compact mixture.
  • Heat the 28-centimeter Flavorstone® deep pan over medium-low heat, add the meat mixture, cover, and cook for at least 25 minutes or until the meat is cooked very well.
  • While the meat is cooking, prepare the mashed potatoes. Place the cooked potatoes in a bowl, add the melted butter, sour cream, cream cheese, and season with salt and pepper, then mash with a potato masher until you get a puree and remember to mix frequently to integrate all the ingredients well. Once ready, place the mashed potatoes in a piping bag with a smooth tip. Set aside.
  • Once the meat is cooked, uncover the Flavorstone® deep pan, place the mashed potatoes with the piping bag on top of the meatloaf and cook for 10 more minutes, uncovered.
  • Garnish the mashed potato meatloaf with parsley and serve, you will love it!
