Meatloaf with Chorizo and Potato

Prepare this meatloaf with chorizo and mashed potatoes in a baking dish, which pairs very well with salad. It is an easy and practical recipe to have a complete meal in a short time. Add a bit more flavor with manchego cheese, and to ensure your mash has a firm consistency and doesn't lose shape when baking, avoid making it too soft.

  • 500 grams ground beef
  • 500 grams ground pork
  • 1 cup onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup chorizo, fried
  • 1/2 cups parsley, finely chopped
  • 1 teaspoon cumin powder
  • salt

  • 4 potatoes
  • 1/2 cups Manchego cheese
  • 3 tablespoons butter
  • 1/4 cups sour cream
  • 1 teaspoon pepper
  • 1/2 cups cow's milk
  • salad, for serving

  • Mix the meats, onion, garlic, chorizo, parsley, cumin, salt, and pepper in a bowl. Place in a baking dish and bake at 180 °C for 35 minutes.
  • In a bowl, mash the potatoes, add the manchego cheese, butter, cream, pepper, and milk.
  • Place the mash in a piping bag with a star tip and form rosettes on top of the meatloaf, as shown in the video. Bake for an additional 5 minutes, until golden brown.
  • Serve hot and accompany with salad. Enjoy.
