Meatloaf with Potato Tortilla

Try this new version of meatloaf with a layer of potato tortilla, which creates a delicious flavor combination, and becomes a very complete dish due to its balanced contribution of protein and carbohydrates.

  • 4 tablespoons olive oil
  • 1/4 onions, cut into half-moons
  • 2 potatoes, sliced into 2 mm thick slices
  • 3 eggs
  • salt and pepper
  • 300 grams ground beef
  • 300 grams ground pork
  • 1 tablespoon garlic, finely chopped
  • 4 tablespoons ketchup
  • 2 tablespoons mustard
  • 1 tablespoon parsley, finely chopped
  • 1 cup pepper in oil
  • 6 slices Manchego cheese

  • Preheat the oven to 180°C.
  • In a skillet, heat the oil over medium heat, add the onion, cook until softened, add the potatoes, season with salt and pepper, and cook for 10 minutes until softened. Let cool and set aside.
  • Beat the eggs with salt and pepper, add the previous mixture and set aside.
  • Mix ground beef with ground pork, add ketchup, mustard, garlic, parsley, season with salt and pepper.
  • In a rectangular mold, place the slices of bacon to cover the mold, add the meat mixture, add the peppers, the slices of cheese, and the potatoes with egg.
  • Bake for 40 minutes.
  • Unmold, and bake for an additional 10 minutes uncovered to brown the bacon.
  • Cut a slice and serve with spinach salad.
