  • 2 tortillas, for the tortilla sauce

  • Heat the oil in a pan over medium heat, fry the potato peel until golden, add the onion and jalapeño pepper, and sauté for 10 minutes. Season and set aside.
  • Heat oil in another pan over medium heat, sauté the onion and garlic, add the cold cuts scraps, and cook until golden. Finally, add the tomato puree and cook for 5 more minutes. Set aside.
  • For the tortilla sauce: heat the oil in a pan over medium heat, fry the chiles and remove. Then, fry the onion and garlic, remove, and finally, fry the tortilla and remove. Blend all the sauce ingredients with a little salt.
