Air Tacos

The famous air tacos, also known as tacos de nada, are a typical dish from León, Guanajuato. Their main appeal is that they are very tasty and economical, making them the perfect recipe for the end of the pay period or post-holiday season.Additionally, to prepare these golden tacos you need very few ingredients, which you probably already have in your kitchen.   • 1 kilo Proan® pork skins

Low
  • In a pot with enough water, place the Proan® pork rinds, garlic cloves, salt, bay leaf, pepper, and oregano. Cook for 40 minutes or until the pork rinds are ready. Drain and let cool.
  • For the pickling: in another pot, place the vinegar, water, onion, jalapeño peppers, carrots, and salt. Cook for 10 minutes and remove from heat. Place the pickling mixture in a bowl, add the Proan® pork rinds, and let sit for 30 minutes. Set aside.
  • Fold the tortillas in half and fry them in a pan with oil over medium heat for 3 minutes or until they are crispy. Set aside.
  • Serve the air tacos on a plate, decorate with cabbage, pico de gallo, and Proan® pork rinds. Accompany with lime juice and red salsa!
