Alambre Tostadas al Pastor

The alambre is one of the most popular dishes in Mexico and can be found in taquerías and Mexican restaurants. The dish consists of some protein with onion, bell pepper, cheese, and more.Although it may seem hard to believe, alambre is inspired by a dish from the Middle East: the shish kebab! This recipe arrived in our country thanks to migration and began to be prepared on large skewers, which is why it’s called alambre!On this occasion, we gave it a twist and prepared it al pastor. Additionally, it is accompanied by Susalia® Tostadas, which contain inulin and prebiotics that help you have a more balanced diet, give them a try!

  • vegetable oil
  • 1 cup onion, in cubes
  • 1 kilo pork leg, in cubes
  • 1/3 cups achiote liquid
  • 1 cup orange juice
  • 1/4 teaspoons clove
  • 1/4 teaspoons garlic powder
  • 1/4 teaspoons ground cumin
  • 1 green bell pepper, in medium cubes
  • 1 yellow bell pepper, in medium cubes
  • guacamole, for accompaniment
  • 2 cups Manchego cheese, grated
  • Susalia® Toasts, for accompaniment
  • onion, for accompaniment
  • cilantro, for accompaniment
  • lime, for accompaniment
  • pineapple, for accompaniment

  • Heat the oil in a skillet over medium heat. Sauté the onion until it changes color and add the meat. Season with the achiote, spices, salt, and pepper, and cook for 10 minutes. Add the bell peppers and cook over medium heat for 10 more minutes.
  • When the meat is well cooked, add the manchego cheese and cover. Allow it to melt with the heat of the pan.
  • Serve some guacamole over the Susalia® Tostadas. Add the alambre, onion, cilantro, and lime juice.
