Aztec Cake with Mexican-Style Steak and Flour Tortilla

Try this delicious Aztec cake with Mexican-style steak and flour tortillas and give a twist to this popular dish.   • 4 cups wheat flour, for the tortillas
  • 1/3 teaspoons salt, for the tortillas
  • 2 teaspoons REXAL® baking powder, for the tortillas
  • 1/2 cups butter, for the tortillas
  • 1/2 cups vegetable shortening, for the tortillas
  • 1 cup water, hot, for the tortillas
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic, finely chopped
  • 1 cup white onion, finely chopped
  • 2 cups tomato, finely chopped
  • 1/2 cups serrano chile, sliced
  • 3 cups beefsteak, chopped
  • 1 pinch salt and pepper
  • 1/2 cups fresh cilantro, finely chopped
  • 1 cup refried beans
  • 2 cups asadero cheese, grated
  • 1 cup red salsa
  • avocado, sliced, for garnish

  • Preheat the oven to 180°C.
  • For the tortillas, in a bowl mix the flour with the salt, Rexal® baking powder, butter, lard, and water. Knead until a smooth dough forms. Let it rest for 15 minutes.
  • Form a ball of dough and on a floured surface, roll out to form the tortilla. Cook on a griddle over low heat for 3 minutes, or until the tortilla puffs up and is cooked inside, flipping halfway through cooking.
  • Heat a skillet over medium heat with the oil, cook the garlic and onion until transparent. Add the tomato and chili, cook for one minute, add the steak and season with salt and pepper. Continue cooking for about 5 minutes or until the meat is cooked, finish with chopped cilantro.
  • In a mold or cast iron skillet, place a base of flour tortillas, spread with beans and place the Mexican-style steak, cover with cheese and drizzle with red sauce, repeat the process until filled. Cover with a final layer of flour tortillas, cheese, and bake for 10 minutes. Serve with avocado and fresh cilantro.
