Bean Ceviche

  • 1 cup red onion, finely chopped
  • 1/2 cups cilantro, finely chopped

  • 4 limes, seedless
  • 2 cups tomato, in medium cubes
  • 1 cup yellow bell pepper, in medium cubes
  • 4 cups black beans, cooked, without broth
  • 2 serrano chiles, finely chopped
  • 1 cup panela cheese, in medium cubes
  • 1/2 cups orange juice, seedless
  • tortilla chips, baked, for accompaniment

  • Mix the onion, cilantro, and enough salt and pepper in a bowl, then squeeze the lemons and let it rest for at least 10 minutes.
  • Add the tomato, yellow bell pepper, cooked beans, serrano chili, panela cheese, and orange juice. Mix the bean ceviche very well and adjust the seasoning with salt and pepper.
  • Serve the bean ceviche and accompany with baked tortilla chips.
