Bean Ceviche

  • Mix the onion, cilantro, and enough salt and pepper in a bowl, then squeeze the lemons and let it rest for at least 10 minutes.
  • Add the tomato, yellow bell pepper, cooked beans, serrano chili, panela cheese, and orange juice. Mix the bean ceviche very well and adjust the seasoning with salt and pepper.
  • Serve the bean ceviche and accompany with baked tortilla chips.
