Bean Gorditas

Mexican snacks are perfect for preparing on a weekend or serving as appetizers at a gathering. We prepare this handmade Bean Gorditas recipe, which you can serve with lettuce and fresh cheese; you can also add cream and avocado for better flavor. A great tip for making Bean Gorditas is not to overfill them to avoid deforming or opening the dough.

  • 2 tablespoons lard
  • 1/4 cups onion, finely chopped
  • 2 árbol chiles, without tails
  • 2 cups black beans, without broth
  • 500 grams masa dough, for the dough
  • 1 tablespoon lard, for the dough
  • 1 tablespoon baking powder, for the dough
  • salt
  • vegetable oil, for frying
  • 4 tomatillos, for the sauce
  • 3 serrano chiles, for the sauce
  • 1/3 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 cups fresh cilantro, for the sauce

  • In a skillet over medium heat, heat the lard and sauté the onion and tree chiles, add the beans and with the help of a masher, crush until you have soft and smooth beans. Let cool and set aside.
  • For the dough, in a bowl mix the corn masa with lard, baking powder, salt, and knead until combined.
  • With the help of your hands, take a bit of dough, add a tablespoon of beans in the center, and close it to form gorditas.
  • In a skillet over medium heat, fry the gorditas for the 3rd time for 5 minutes on both sides or until golden brown. Drain on paper towels.
  • For the sauce, blend the tomatoes with the serrano chili, onion, garlic, and cilantro until you obtain a sauce.
  • On a cutting board, cut your gorditas in half and fill with lettuce and cheese, and garnish with cream and avocado. Serve with the sauce.
