We prepare this handmade Bean Gorditas recipe, which you can serve with lettuce and fresh cheese; you can also add cream and avocado for better flavor. A great tip for making Bean Gorditas is not to overfill them to avoid deforming or opening the dough.
In a skillet over medium heat, heat the lard and sauté the onion and tree chiles, add the beans and with the help of a masher, crush until you have soft and smooth beans. Let cool and set aside.
For the dough, in a bowl mix the corn masa with lard, baking powder, salt, and knead until combined.
With the help of your hands, take a bit of dough, add a tablespoon of beans in the center, and close it to form gorditas.
In a skillet over medium heat, fry the gorditas for the 3rd time for 5 minutes on both sides or until golden brown. Drain on paper towels.
For the sauce, blend the tomatoes with the serrano chili, onion, garlic, and cilantro until you obtain a sauce.
On a cutting board, cut your gorditas in half and fill with lettuce and cheese, and garnish with cream and avocado. Serve with the sauce.
